Nut-Free Honey Oat Granola Bars

Hello everyone! Today I am sharing a super simple and easy recipe for homemade granola bars that are free of nuts, eggs, soy and gluten!

These can also be made vegan by simply making sure your chocolate chips are vegan and using maple syrup instead of honey.

You can also make these using nut butters, as almost every ingredient is flexible. The following are some variations you can use:

-Quick cooking oats or old-fashioned rolled oats (not steel-cut)

-peanut, almond, cashew butter or sunflower seed butter

-maple syrup, agave syrup, date syrup or honey

-dark, semi-sweet, milk or white chocolate chips (or omit entirely)

You can also add chopped nuts, raisins, dried cranberries, or any other mix-in that sounds good to you!

Nut-Free Honey Oat Granola Bars

Simple nut-free granola bars, completely homemade!

Ingredients

  • 2 cups (160g) quick or old-fashioned rolled oats

  • 1/4 cup (30g) sunflower seeds (optional, sub for an equal amount of oats if omitting)

  • 1/4 cup (44g) mini chocolate chips (optional)

  • 3/4 cup (192g) sunflower seed butter (can sub peanut for non nut-free)

  • 1/3 cup (113g) honey/maple syrup

  • 1 tsp vanilla extract

  • 1/8 tsp salt

  • mini chocolate chips for topping (optional)

Directions

  • Line an 8×8 or 9×9 square pan with parchment or wax paper and set aside. In a large bowl combine the oats, seeds and chocolate chips. Stir in the sunflower seed butter, honey, vanilla and salt until completely combined.
  • Press mixture firmly into the prepared pan, then sprinkle with the extra chocolate chips (if using) and gently press them in. Cover and chill for at least 2 hours, then slice into 10 equal bars. Store wrapped or bagged for up to 1 week in the fridge or 1.5 months in the freezer. Enjoy!
