Hello everyone! Today I would like to share a recipe I came up with for a simple apple mixture that tastes surprisingly similar to apple pie, but made healthier, and an oat streusel topping!
The key to this recipe is to dice the apples very finely. It will take some time, but in the end it will cook quicker and yield a more “spoonable” final product.

The sweetener for the apples is completely up to you. You can use anything from stevia or maple syrup, to regular brown sugar or apple juice concentrate. Start with 2 tbsp of whatever you choose, then add more to taste.
Mini Apple Streusels

Ingredients
3-4 honeycrisp apples (more if they’re smaller, less if bigger)
1 tbsp (14g) salted butter
1/2 tsp ground cinnamon
1/8 tsp ground allspice
1 pinch salt
2 tbsp sweetener of choice (maple, honey, brown sugar, etc.) or 1-2 packet(s) stevia
1/2 cup (113g) water or apple juice
1/2 tbsp cornstarch, plus more as desired
Topping:
3/4 cup (69g) oat flour
1/2 cup (50g) rolled oats
1/4 cup (53g) brown sugar, packed
1/8 tsp baking soda
1 pinch salt
1/4 cup (56g/0.5 stick) salted butter, melted
1/2 tsp vanilla extract
Directions
- Preheat your oven to 375F. Peel and dice the apples into 1/8-1/16″ cubes. Add to a pot along with all of the other filling ingredients except the starch. Set over medium heat and stir until it begins to bubble, then cover and stir occasionally until the apples are softened to your liking. I cooked mine for around 10 minutes. Add more water if too much boils off.
- Mix the starch with an equal amount of water and stir into the apple mixture. Heat and stir until thickened, then set aside.
- In a separate medium bowl combine all ingredients for the topping with a spatula until you have a crumbly mixture. Chill until ready to assemble.
- Evenly divide the apple mixture between 6 ramekins that are at least 8oz. Divide the topping between them, then gently press it down. Bake for 8-12 minutes or until browned on top. Let cool 5-10 minutes before topping as desired and enjoying!

- You can mix more starch with water and add it if you desire a thicker mixture.
