Linzer Cookie Slices

Ingredients
6 tbsp (85g/0.75 stick) salted butter, room temperature
3 tbsp (37g) granulated sugar
1 egg yolk
1 tsp water
1/2 tsp vanilla extract
1/2 cup + 3 tbsp (83g) all-purpose flour
1/4 cup (24g) almond flour
1 tsp orange zest
1/2 tsp ground cinnamon
1/8 tsp salt
Pinch of ground nutmeg, freshly ground if possible
2-3 tbsp (40-60g) jelly of choice
Directions
- In a large bowl beat together the butter and sugar until light and creamy. Mix in egg yolk, water and vanilla. Add in the flours, orange zest, cinnamon, salt and nutmeg. Stir until homogenous, stopping to scrape down the sides.
- Divide the dough in half and roll each out on a floured worksurface into an approximately 11″ log. Form each one into a long rectangle, then make a channel down the middle of each with the handle of a spoon or spatula. Chill uncovered for at least 30 minutes, up to 2 hours.
- Once ready to bake, fill each channel with half of the jelly. Bake at 375F for 16-20 minutes or until browned on the edges and filling is bubbly. Let cool completely, then cover the filling with a butter knife and sprinkle the outer edges with powdered sugar.Slice into 1/2″ slices at a 45 degree angle. Enjoy!
