Hello everyone! Today I would like to share a recipe that I came up with recently, combining a cinnamon cookie with cinnamon chips and a streusel topping. Rich and sweet, but balanced.
The chips in these cookie can be swapped for any kind you would like. Chocolate, white chocolate, butterscotch, caramel, any chips you can think of! (Other than maybe potato chips)

Cinnamon Chip Streusel Cookies

Ingredients
1/2 cup (113g/1 stick) salted butter, softened
1/2 cup (105g) light brown sugar, packed
1/2 egg*
1/2 tsp vanilla extract
1 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp baking powder
scant 1/4 tsp salt
1 1/4 cups (150g) all-purpose flour
1/2 cup (85g) cinnamon chips
Streusel:
1/4 cup (56g/0.5 stick) salted butter, softened
1/4 cup (52g) light brown sugar, packed
1/2 cup (60g) all-purpose flour
1/2 tsp ground cinnamon
Directions
- Preheat oven to 350°F and line a baking sheet with parchment paper or a silicone mat
- In a large bowl beat together butter and brown sugar until light. Add in the egg and vanilla, then mix again until smooth. Fold in the flour, baking soda, baking powder, salt and cinnamon until almost fully incorporated. Be careful not to overmix. Fold in the cinnamon chips.
- In a separate bowl combine the butter, brown sugar, flour and cinnamon for the streusel using a fork or spatula. If it isn’t crumbly enough, add more flour 1 tbsp at a time until you reach your desired consistency.
- Divide the dough onto the prepared baking sheet using a 3-tbsp cookie scoop. Flatten the tops with the palm of your hand, then sprinkle on about 1.5 tbsp of the streusel mixture. Optionally, at this step you can cover them and chill them for 30 minutes to keep them from spreading too much. You can also chill them for up to 72 hours.
- Once ready, bake for 15-18 minutes, until golden brown on the edges and soft in the centers. Remove and cool completely. Enjoy!

Notes
- *I would recommend beating an egg until smooth, then pour half into the bowl. I usually go by weight, which should be about 25g for half of a large egg.
- You can use any chips you would like in this recipe, from regular chocolate to butterscotch or white chocolate. Feel free to experiment!
