Cottage Cheese Edible Cookie Dough

Hello! In this recipe I am making an edible cookie dough made with only 6 ingredients, one of which being blended cottage cheese!

Blended cottage cheese has gotten quite popular as of recent, and for good reason; it is a lower calorie and higher protein substitute that works great in a plethora of recipes.

For this recipe, all you will need is a food processor or high-power blender.

I used oat flour for this recipe as it is my favorite texture for uncooked recipes, but you can absolutely use almond flour or baked wheat flour (whole or white)

Difficulty: Easy

servings

Super simple, high in protein and only 6 ingredients required for this cottage cheese edible cookie dough!

Ingredients

  • 2 cups (454g) cottage cheese (low-fat and full-fat both work well)

  • 1/4 cup (84g) pure maple syrup

  • 2 tsp vanilla extract

  • 2 cups (184g) oat flour

  • 1/2 cup (113g) protein powder of choice

  • 1/2 – 1 cup (85-170g) chocolate chips of choice (optional)

Directions

  • Blend the cottage cheese, maple syrup and vanilla in a high-power blender or food processor for 1 minute. Scrape down the sides and blend another 30 seconds. Transfer to a mixing bowl and stir in the oat flour and protein powder, followed by the chocolate chips. Cover or transfer to a lidded container and store in the fridge for up to 1 week. Enjoy!

Notes

  • I went with vanilla whey protein powder, but most flavors would work well in this recipe.
