Cream Cheese Cookies

Hello everyone! Today I would like to share one of the simplest cookie recipes I have made yet, cream cheese cookies!

These cookies are made similar to soft sugar cookies, but with the inclusion of softened cream cheese. They have a slightly tangy flavor, and a soft, lightly chewy texture.

Cream Cheese Cookies

Soft, tangy and delicious cream cheese cookies!

Ingredients

  • 1/2 block (113g/4oz) full-fat cream cheese, softened*

  • 1/2 cup (113g/1 stick) salted butter, softened

  • 1 cup (200g) granulated sugar

  • 1 egg

  • 2 tsp vanilla extract

  • 1 3/4 cups (210g) all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp salt

Directions

  • In the bowl of a stand mixer (or a regular medium bowl) beat together the butter and cream cheese until smooth, stopping to scrape down the sides as needed. Add in the sugar, followed by the egg and vanilla. Mix until smooth. Stir in the flour, baking powder and salt, being careful not to overmix.
  • Divide onto a parchment paper or silicone mat lined baking sheet using a 2-3 tbsp cookie scoop (I used 2 tbsp). Cover and chill for at least 2 hours, up to 24 hours.
  • Once ready to bake, preheat oven to 375F and bake for 11-15 minutes or until just starting to brown on the bottom edge. Let cool completely on the baking sheet before enjoying! These will last 3 days in an airtight container at room temp, a week in the fridge, or a couple months in the freezer.

Notes

  • *I would recommend you place the cream cheese into a microwave-safe bowl and heat for 20 seconds on half power, stir and assess the softness. If it is very spreadable, you are good to go. Normal room temperature is a bit stiff for this recipe.
