
Hello everyone! In this recipe I will share a super simple method for making mousse using only cocoa powder, no solid chocolate.
I made this recipe to be very flexible in terms of ingredients, so hopefully you can use whatever you have on hand!
For this mousse you will need heavy cream, powdered sugar, vanilla extract, cocoa powder, and some other kind of thick dairy product.
For this, you can use cream cheese (or Neufchâtel), sour cream, mascarpone, labneh, greek yogurt, regular yogurt, or blended cottage cheese. The only thing I would recommend is to look for is full-fat, as it improves the flavor, but you can use low-fat or non-fat as well.
As for the cocoa powder, you can use any kind you have. My favorite is to use a moderately dutch-processed cocoa powder, but anything from natural cocoa to black cocoa works. Just make sure it is unsweetened.

Without further ado, here is the recipe!
Dutch Cocoa Chocolate Mousse

Ingredients
1 1/2 cups (302g) heavy cream
1/2 cup (56g) powdered sugar
1/3 cup (56g) unsweetened cocoa powder*
2/3 cup (151g) full-fat greek yogurt (see notes)
2 tbsp (14g) powdered sugar
1/2 tsp vanilla extract
Directions
- In a small bowl, mix the yogurt (or dairy product of choice, see notes), 2 tbsp powdered sugar and vanilla until smooth. In a separate bowl, whip the cream, 1/2 cup powdered sugar and cocoa powder until you get stiff peaks, about 3-4 minutes. Fold the first mixture into the whipped cream using a silicone spatula.
- Transfer to a piping bag by placing the bag into a cup and folding the edges over, then scoop the mousse in and remove it from the cup. Cut the tip and pipe into your choice of serving dishes, then cover and chill at least 2 hours.
- Serve and enjoy! Optionally, top with whipped cream, chocolate sauce, or your favorite topping. These will last about 3-4 days in the fridge.

Notes
