Easy Filled Crêpes

Hello everyone! Today’s recipe is super easy, only a few ingredients and very versatile.

A crepe is a flat bread/cake that is made with flour, milk, eggs and butter. These crepes don’t have any sweetener, so they could be made savory or sweet. They are also very quick to make, only about 10-15 minutes.

For mine I use orange curd, which I made in a recent short on YouTube, but you can use just about anything that you’ve got. Jams, chocolate, meats and cheeses, nut/seed butters, the sky’s the limit!

Easy Filled Crêpes

Crepes

Simple, easy and quick crepes for any occasion!

Ingredients

  • 2 eggs

  • 1/2 cup (113g) milk (can use any kind)

  • 1/2 cup (113g) water

  • 1/2 tsp vanilla extract

  • 1/4 tsp salt

  • 1 cup (120g) all-purpose flour

  • 2 tbsp (28g/0.25 stick) salted butter, melted (plus more for the pan)

  • 1 cup filling of choice (I used orange curd)

  • Optional whipped cream:

  • 1 cup (227g) heavy cream

  • 2-4 tbsp powdered sugar, depending on how sweet you want it

  • 1/2 tsp vanilla extract

Directions

  • In a blender or large bowl add the eggs, milk, water, vanilla, salt, flour and melted butter. Blend on high for about 30 seconds, or until completely smooth. If whisking by hand, it will take about 2 minutes.
  • Preheat a medium pan over medium heat and melt a little bit of butter in it. Pour in about 1/4 cup of the batter and quickly swirl it around the pan until there is no liquid left. Flip once browned on the bottom, about 60-90 seconds. Once the other side is browned, remove and let cool completely.
  • For the whipped cream, beat the cream, powdered sugar and vanilla together until you have stiff peaks. This goes faster in a chilled bowl with chilled beaters, but they don’t have to be chilled and you can whip it by hand too. Spread about 1.5 tbsp of your filling of choice onto half of a crepe, then fold it over and spread another 0.5 tbsp onto half of it. Fold it over again and optionally top with whipped cream. Serve immediately and enjoy!
