Wedding Cookies/Snowball Cookies

Sweet, tart and crisp wedding/snowball cookies!

Ingredients

  • 1/2 cup (113g/1 stick) salted butter, room temperature

  • 1/4 cup (28g) powdered sugar

  • 1 tsp vanilla extract

  • 1/2 tsp lemon extract

  • 1/4 tsp almond extract (Optional)

  • 1/4 tsp salt

  • 1/4 + 1/8 cup (36g) almond flour

  • 1 1/8 cups (135g) all-purpose flour

  • Coating:

  • 1 cup (120g) powdered sugar

Directions

  • Preheat oven to 325F and line a baking sheet with parchment paper or a silicone mat. In the bowl of a stand mixer (or large bowl if making by hand) beat together the butter, powdered sugar, extracts and salt until creamy, about 2 minutes. Stir in the flours, being careful not to overmix.
  • Scoop into balls using a 1-tbsp cookie scoop, then divide each one in half and roll in your hand until rounded. Place on the prepared pan and repeat with remaining dough.
  • Bake for 15-20 minutes, until the cookies are just barely beginning to brown on the bottom edges. Remove and let cool for about 5 minutes, then coat in powdered sugar.
  • Let cool completely. Coat in powdered sugar again, knocking off the excess. Enjoy!
