Whole Wheat Biscuits

Hello everyone! Today I am sharing a super simple biscuit recipe that is entirely whole wheat, great for many applications!

For these you will only need 6 ingredients:

White whole wheat flour

Or whole wheat pastry flour. Regular whole wheat flour will not work for this, as you need something “softer” to give enough structure and gluten development to keep these from falling apart.

Baking soda + Baking powder

Typical for just about any biscuit, you need some kind of leavening and baking powder and soda are the main ones for these.

Salt

Increase/decrease the amount of salt depending on what kind you have. The quantity listed is based on table salt, but use a bit more if you have sea salt or kosher salt. Also, I used salted butter, but if you use unsalted add a pinch more as well.

Butter

I prefer to always use salted, but unsalted works just as well. I diced mine beforehand, then separated the pieces and froze it for 10-20 minutes before making the biscuits to make sure it was nice and cold.

Buttermilk

I used a homemade buttermilk substitute, made with 1 cup of milk and 1 tbsp of vinegar (white or apple cider work!). Combine them, then let it sit for 5-10 minutes. You can also use kefir in place of buttermilk.

And that’s it! These will only take around 20-30 minutes total, not counting the time it takes for your oven to preheat. You will also need a 2 1/2″ round cutter, and a surface to shape and cut the dough on.

Biscuits

Super simple, 6-ingredient biscuits made with only whole wheat flour.

Ingredients

  • 2 cups (240g) white whole wheat flour, plus more for dusting

  • 1 tbsp baking powder

  • 1 tsp baking soda

  • 3/4 tsp salt

  • 1/4 cup (56g/0.5 stick) salted butter, cubed and chilled

  • 1 cup (227g) buttermilk (cold)

Directions

  • Preheat oven to 450F and line a baking sheet with parchment paper or a silicone mat. In a large bowl combine the flour, baking powder, baking soda and salt. Cut in the cold butter until the pieces are no larger than peas. Place in the freezer for 10 minutes.
  • Once chilled, stir in the buttermilk using a spatula. The dough will be a bit sticky and soft. Turn out onto a well floured worksurface, flour the dough heavily and gently pat to about 1″ thick. Cut into biscuits using a 2 1/2″ round cutter. Important: do not twist the cutter, just press down and pull back up to prevent the edges from sealing and impeding their rise.
  • Place onto the prepared sheet and bake for 8-12 minutes or until browned on top and they sound somewhat hollow when tapped. Enjoy while warm, or let cool and store at room temperature for 3-4 days. These can also be frozen for a couple months.

Notes

  • *I chopped my butter into small pieces beforehand, then separated them and froze them for about 10 minutes to make it extra cold before preparing the dough.
